{"id":1518,"date":"2013-01-12T17:07:27","date_gmt":"2013-01-12T16:07:27","guid":{"rendered":"http:\/\/www.weirdbutinagoodway.co.uk\/blog\/?p=1518"},"modified":"2013-01-12T17:11:28","modified_gmt":"2013-01-12T16:11:28","slug":"chocolate-truffles","status":"publish","type":"post","link":"https:\/\/www.weirdbutinagoodway.co.uk\/blog\/2013\/01\/12\/chocolate-truffles\/","title":{"rendered":"Chocolate Truffles"},"content":{"rendered":"<p>This year for Christmas I handmade chocolate truffles as gifts for my friends, They are really simple to make and incredibly tasty. <\/p>\n<p><strong>Chocolate Truffles<\/strong><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.weirdbutinagoodway.co.uk\/blog\/wp-content\/uploads\/2013\/01\/wpid-IMG_20121223_180813.jpg?ssl=1\"><img decoding=\"async\" title=\"IMG_20121223_180813.jpg\" class=\"alignnone\" alt=\"image\" src=\"https:\/\/i0.wp.com\/www.weirdbutinagoodway.co.uk\/blog\/wp-content\/uploads\/2013\/01\/wpid-IMG_20121223_180813.jpg?w=604&#038;ssl=1\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>For one batch<\/p>\n<p>150g chocolate<br \/>\n75ml double cream<br \/>\n2 shortbread fingers<\/p>\n<p>Break the chocolate into chunks and set aside in a bowl.<\/p>\n<p>Warm the cream until just below boiling, pour over the chocolate. This will start the chocolate melting.<\/p>\n<p>Put the bowl with the cream and chocolate over a saucepan of simmering water (make sure the bottom of the bowl isn&#8217;t touching the water) and melt the chocolate stirring into the cream until smooth.<\/p>\n<p>Crumble the shortbread and mix well into the chocolate cream mix. <\/p>\n<p>If you want plain truffles set the mix aside at this point to set, if you want it flavoured add the extra ingredients now stirring through well and then set aside&#8230;<\/p>\n<p>Different chocolate takes slightly different lengths of time to set so they could need to be left anything between 2-4 hours what you&#8217;re looking for is something quiet solid that holds its shape when rolled into balls.<\/p>\n<p>Once it&#8217;s at that consistency use a heaped teaspoon of mix and roll to shape between your hands. It can be quite messy and the warmth of your hands can begin to soften the mix again.<\/p>\n<p>Once all the mix is used roll in icing sugar, coconut, cocoa or chocolate flakes to finish dependent on flavour.<\/p>\n<p>These store really well in an air tight container.<\/p>\n<p>Flavour combinations I&#8217;ve used are&#8230;<\/p>\n<p>White chocolate and glace cherry rolled in icing sugar.<br \/>\nWhite chocolate and dried apricot rolled in icing sugar<br \/>\nMilk chocolate and ameretto finished with chocolate flakes<br \/>\nDark chocolate and dried cranberry rolled in cocoa.<\/p>\n<p>If adding fruit use dried fruit, 25g is about enough per batch.<\/p>\n<p>If adding spirits add a cap full only at a time and taste.
