{"id":1514,"date":"2013-01-11T20:39:02","date_gmt":"2013-01-11T19:39:02","guid":{"rendered":"http:\/\/www.weirdbutinagoodway.co.uk\/blog\/?p=1514"},"modified":"2013-03-08T08:54:58","modified_gmt":"2013-03-08T07:54:58","slug":"vegetable-pastry-slice","status":"publish","type":"post","link":"https:\/\/www.weirdbutinagoodway.co.uk\/blog\/2013\/01\/11\/vegetable-pastry-slice\/","title":{"rendered":"Vegetable Pastry Slice"},"content":{"rendered":"<p>Last night I had my friend Catherine over for dinner and it gave me the opportunity to try out a variation of a recipe I&#8217;d read online a while ago. <\/p>\n<p>I hadn&#8217;t got all the veg in the house that I remember was in the original but I had enough that I thought it would work.<\/p>\n<p>Here&#8217;s what I made<\/p>\n<p><strong>Vegetable Pastry Slice<\/strong><br \/>\n(Makes 4 slices)<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.weirdbutinagoodway.co.uk\/blog\/wp-content\/uploads\/2013\/01\/wpid-20130110_194433.jpg?ssl=1\"><img decoding=\"async\" title=\"20130110_194433.jpg\" class=\"alignnone\" alt=\"image\" src=\"https:\/\/i0.wp.com\/www.weirdbutinagoodway.co.uk\/blog\/wp-content\/uploads\/2013\/01\/wpid-20130110_194433.jpg?w=604&#038;ssl=1\" data-recalc-dims=\"1\" \/><\/a> <\/p>\n<p>One pack of pre rolled puff pastry<br \/>\n2 red onions<br \/>\n1 red peppers<br \/>\n8-12 Cherry tomatoes<br \/>\nSome\u00a0 Mushrooms<br \/>\nRoasted red pepper pesto<br \/>\nMozzarella<br \/>\nCheddar<\/p>\n<p>Take the pastry out of the fridge before you start, that way it will have <strike>warmed slightly<\/strike> be less cold before you&#8217;re ready for it and is less likely to crack when you unroll from the pack.<\/p>\n<p>Pre heat oven to Gas mark 6 (or whatever that equates to in \u00b0c\/\u00b0f)<\/p>\n<p>Peel and quarter the onions and separate the layers and slice the peppers.<\/p>\n<p>Chop mushrooms into quarters.<\/p>\n<p>Heat some olive oil in a heavy bottomed pan and throw in the veg, after a couple of minutes throw in the mushrooms and either 2 or 3 cherry tomatoes per slice (dependant on taste). Remove pan from the heat when the veg is starting to look charred and the tomatoes soft.<\/p>\n<p>Unroll the pastry, lie flat and cut into quarters.<\/p>\n<p>Now take a sharp knife and score a line all the way around the rectangle about 1cm in from the edge being sure not to cut all the way through. (Don&#8217;t worry if you do a little in parts turn the pastry and smooth with your finger to rejoin the edges), and place on a baking tray.<\/p>\n<p>Using the score lines as a guide spread the pesto over the inside of the slice.<\/p>\n<p>Now spoon the vegetable mix equally on top of the pesto. <\/p>\n<p>Milk or egg wash the visible pastry and put on the top shelf of the oven.<\/p>\n<p>Cook for approx 10 mins or until the pastry is starting to puff.<\/p>\n<p>Remove from the oven and crumble the mozzarella and as much grated cheddar as you like over the veg. <\/p>\n<p>Season with black pepper and return to the oven for 5 minutes, or until the pastry has browned and the cheese melted.<\/p>\n<p>Finish with a couple of leaves of fresh basil.<\/p>\n<p>I served these with rocket, cherry tomatoes and olives with a balsamic dressing.<\/p>\n<p>Variations, I think this would work with roast vegetables too and I&#8217;m planning on trying a similar method with ham, asparagus and cheese.
